Tuesday Night Dinner with Jenna

Most Tuesday nights, my friend Jenna and I gather at my house to eat supper and watch the newest episode of Glee. I cook. She eats. Although, I do need to make it clear, she cooks for me too, just not on Tuesday nights. Good, now that is settled, this is what we ate for dinner tonight:




Honey Mustard Chicken
1/4 Cup Dijon Mustard
3 Tablespoons Honey
2 Teaspoons Lemon Juice
Approximately 1 Cup Dried Bread Crumbs
4 Boneless, Skinless Chicken Breasts
1-2 Tablespoons of Olive Oil
Cajun Spice to Taste (Optional)


In a shallow dish, combine the mustard, honey and lemon juice. Place bread crumbs in another dish. Roll chicken in the honey mixture, then in the bread crumbs; place on a greased baking pan lined with aluminum foil. Drizzle with oil and sprinkle with cajun spice. Bake at 350 Degrees, for 30-35 minutes.

  2. Yum! I make something similar except instead of breadcrumbs I use those yummy French's Fried Onions (from Green Bean casserole you know?) and instead of making the honey mustard I use Boar's Head Honey Mustard from the grocery deli :) It is one of our FAVS!!
